Things that make my heart happy:
My hubby and my puppy. Feeling Hennebaby kick.
Knowing that my friends and family love me enough to throw us not one but two lovely baby showers. Chilly air in the morning and pumpkin recipes in my inbox. When my BFF calls me just to say hi. The smell of something cooking in my house. Playoff baseball.
There cookies fall into both categories: lots of heartburn, but totally worth it. The cinnamon chips and the white chocolate chips are a perfect match. Even the hubby said that they were the yummiest thing I've made in a while. Try them, immediately. You'll be glad you did.
Even if you have to grab the Tums.
White Chocolate Cinnamon Cookies
1 cup (2 sticks) butter or margarine, softened
1 cup packed light brown sugar
1/3 cup granulated sugar
1-1/2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 cup quick-cooking oats
1 package cinnamon chips
1 cup white chocolate chips
Time and temperature: 350 degrees for 11-12 minutes
Cream the butter, brown sugar and granulated sugar and add the eggs and vanilla, beating well after each addition. Combine flour and baking soda; add to butter mixture and mix until combined. Stir in oats, cinnamon chips and white chocolate chips. Drop in tablespoons onto lined cookie sheets and bake for 11-12 minutes, until the edges are golden brown. Cool on wire racks and enjoy with a happy heart.
